"There is no sincere love than the love of food."
Food has always been a big part of my life at home with parents. My mother
and I both enjoy baking and the science that goes into these magical
chemical reactions that can result in the most amazing food. I'm a firm
believer that food is the way to anyone's heart, and the art of cooking
and baking brings only pure joy. Here are a couple of my favourite recipes
that I've made in the past year!
Chewy Chocolate Chip Cookie
Ingredients

Dry Ingredients
- 2 and 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon salt

Wet Ingredients
-
3/4 cup (1.5 sticks or 170g) unsalted butter, melted &
slightly cooled
- 3/4 cup (150g) packed light or dark brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg + 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract

Extra
-
1 and 1/4 cups (225g) semi-sweet chocolate chips or chocolate
chunks
Directions

Whisk the dry ingredients together in a large bowl. Set aside.

In a medium bowl, whisk the wet ingredients together until no
lumps remain. Pour the wet ingredients into the dry ingredients
and mix together with a rubber spatula.

Cover the dough and chill in the refrigerator for 2-3 hours or up
to 3-4 days.
- Preheat oven to 325°F (163°C).

Roll the dough into balls, about 3 Tablespoons of dough each.
Place 8 balls of dough onto each cookie sheet.

Bake the cookies for 12-13 minutes. Allow to cool on the cookie
sheet for 10 minutes before transferring to a wire rack to cool
completely.
Cinnamon Date-Sticky Buns
Ingredients

Dough
- 2.5 teaspoon active dry yeast
- 3 cups all-purpose flour
- 1 and 1/2 teaspoons salt
- 1/4 teaspoon baking soda
- 3/4 cup buttermilk
- 1 large egg

Filling
- 2 teaspoon cinnamon
- 10 tablespoon vegetable oil
- 1/2 cup dark brown sugar
- 1 cup Medjool dates

Drizzle
- 3/4 cup powdered sugar
- vanilla paste
Directions

Whisk the dry ingredients together in a large bowl. Set aside.

In a medium bowl, whisk the wet ingredients together until no
lumps remain. Pour the wet ingredients into the dry ingredients
and mix together with a rubber spatula.
- Roll out dough into a rough 8" square, add oil and coat.

Cover the dough and chill in the refrigerator till doubled on
size.

Boil the dates in a small saucepan with water, and strain. Blend
with oil, ground cinnamon and a pinch of salt, until a puree.

Grease cast iron skillet with oil. Punch the dough and roll out
into 1/4" thick.

Dollop date puree onto dough and sprinkle dark brown sugar over
puree.

Roll dough into spiral and cut into disks. Place on pan and let
rise for 1.5 hours.

Preheat pan to 350 degrees. Bake buns for 20 minutes until golden
brown.

Whisk powdered sugar, vanilla and 3 tablespoon buttermilk. Brush
over warm buns and serve.
